There were some changes made recently to WfE related to age restrictions that seem to manifest a number of issues with authorizing data sources in Looker Studio. Did you try connecting to a different Google Sheet or a Google Sheet from another Google account?
Not sure that my problem is the same with you, cause I've changed from the old to the new google account workspace. My solution is duplicate the old data source the new one and re-connect it. If you use the extract data then need to re-connect to the new one.
